birch or mahogany?

Question,
When building the ribs those little gusset plates, Birch or mahogany? I was re-reading my plans today and on the sheet that has the rib drawings it states
" all spruce and plywood to be aircraft quality birch plywood where specified " now does this mean all plywood is aircraft quality birch? Or, birch plywood only where stated and the rest mahogany? Having finnished 5 ribs and about to glue the sixth this troubles me. I have been using birch.
